Rotisserie Chicken Fried Rice
Rotisserie Chicken Fried Rice is a quick weeknight family dinner that everyone, including the kids, love. This is a very easy recipe to make with rotisserie chicken.

Yield: 4 people
- 1 tablespoon cooking oil
- 2 medium carrots diced
- 4 stalks celery diced
- ½ medium red bell pepper diced
- 2 green onions trimmed and thinly sliced
- 2 cups chopped rotisserie chicken
- 3-4 cups cooked rice (I use a mix of brown and white)
- ⅛-1/4 teaspoon garlic salt (or to taste)
- ground white pepper to taste
Heat oil in the pan over medium heat. Add in the carrots. Sauté the carrots for about 3 minutes.
Add in the remaining vegetables (celery, red bell pepper, green onions) and sauté for another 3 minutes or so, until the vegetables have slightly softened.
Add in the rotisserie chicken and rice. Turn up the heat to medium-high. Stir-fry for about 5 minutes, until the rice and chicken are fully heated and everything is mixed. Add and mix in the garlic salt and white pepper, to taste. Serve and and enjoy.
